Yea running back away then using Magic or even a Bow is I must admit a very easy way to win most fights. Look for some Mods here by youngneil1, there is one i think may interest you which is a complilation for even harder playing. I use the Normal Compilation on Hard but it does sound like you could need the harder version.
I tend to stick with Melee so I use the Mod that fixes the quirk where you can stop an attack just by constantly hitting/left clicking, the Mod stops your interuption of their attack as being a way to stop them from attacking you at all so you may have to defend as well. That may be what you are seeing with the Grom? if you attack as they run at you they may well stop, as to slow? not so sure about that one, they also will run away a bit to do a weapon change over which leaves them a bit to open as well. As to animals they do have this habit of running away and then back at you again for quick repeated attacks, rather natural to be honest but also predictable and it does make them easy to kill.
Two Worlds even on Hard is not a difficult game, its more the mixture of all the other facets that make it interesting, but becoming a one hit wonder quite easily is a common comment and one youngneil1 is trying to improve on with his compilation mods. Have a try, I tend to shove some skill points into skills I do not use and keep my armour on the light side to help balance the 'Warrior' style a bit. Keep going as the 'baddies' (He He) do get stronger and there may well be times where the backing away will not always work for you. It is for sure a game where you are the Hero without having to try to Hard, but so are many other games I found FO3 and New Vegas quite easy, good old Morrowind quite easy once you skill up a bit and Oblivion well Oblivion is one I cannot play at the hardest level, but I do use an unlevelling Mod so its a very different game.
